Vendange - Harvest
The importance of the harvest, from selecting exactly the right moment to pick through to delivery of the grapes to the winery, is obvious. In 2004 we will pick all our grapes by hand, using small baskets to avoid crushing the bunches. The grapes will be transported directly to our winery where the process of making wine will begin immediately. To preserve the flavour of white grapes it is important that they remain cool when they are harvested - so we intend to pick our sauvignon blanc early in the mornings before commencing their cold maceration (keeping them cool, with their skins to extract the characteristic flavours).
Once picked each parcel will be put into a separate tank for fermentation - we have 12 separate small tanks (see our winery section) - providing the maximum possible flexibility for blending our wines after fermentation.
