We selectively de-leafed our Sauvignon vines enabling the early sun
and morning breeze to warm the bunches of grapes each day. The bunches
were thinned to reduce the yield and ensure there was space to develop
without contact with other bunches. After harvesting
by hand, early in the day to ensure the bunches stayed cool, the
grapes were kept on their skins before pressing and subsequent fermentation
- to extract the trademark characteristics of sauvignon blanc. Fermentation
temperature was kept below 20°C, again to retain freshness.
Tasting notes: Pale straw in colour this clean, fresh wine has floral and tropical fruit aromas. Flavours of sweet grapefruit and lemon sorbet combine with elderflower notes and a zesty acidity.

A
fresh fruity wine, ideal for summer picnics. In 2004 our rosé
was made from a combination of cabernet franc and cabernet sauvignon
providing a perfect balance of fruit and acidity. The grapes were treated
with exactly the same care as our other wines, including low yields,
hand-picking and low-temperature fermentation.
Tasting notes: Fruity with distinct flavours of raspberry, just a hint of sweetness on the palatte and a good balance of zesty acidity. A surprisingly long finish.

A blend of 80% Merlot and 20% Cabernet Sauvignon. The emphasis for this
wine is upon ripe fruit flavours making it accessible early in its'
life but with the structure and level of soft tannins to enable it to
evolve over the next 5 to 7 years. As for our white and rosé
wines, low temperature fermentation ensures that the fruit flavours
dominate the palate and the addition of Cabernet Sauvignon adds to the
structure of the wine. Partial aging in new American oak barrels provides
a further element of complexity.
Tasting notes: Summer pudding fruit flavours dominate with a hint of liquorice from the Cabernet Sauvignon. Barrel aging has added spicy vanilla notes.

Cabernet Sauvignon 2004:(detailed information)

We waited to harvest our Cabernet Sauvignon until the end of October
and the juice was almost black and impenetrable. After several months
in our tanks it softened and dark fruit flavours began to emerge. Its'
development continued and we decided to bottle a small amount (220 cases)
of 100% Cabernet Sauvignon.
Tasting notes: Solid structure with firm tannins and aromas of deep red fruits and strong flavours of liquorice. The wine will continue to evolve over the next four to five years.

Aged in French oak, this, our finest red wine, is made from our oldest parcel of vines. Late harvesting by hand of our 40 year old Merlot and Cabernet Sauvignon in 2004 allowed the fruit to fully ripen. A wine full of dark berry fruit flavours, a small percentage of Cabernet Sauvignon adds a touch of liquorice and oak aging, a soft spicy dimension and notes of vanilla.
Ideal with all red meat dishes and cheese. Serve at room temperature.
